Off to Maine for some fishing, hiking, and of course good eating! Have to make sure the essentials are packed. I feel like I packed half my kitchen and of course the WSM is coming along for the trip. A 10# prime rib is in the cooler to pair up with some lobster one night. A secret surprise none of the folks know about is my plan to make smoked lobster mac-n-cheese for a side one night.
I feel really bad for one of our guests. They're allergic to shellfish. I couldn't imagine a worse trip to go on... hahaha!
PS. Before our food safety experts weigh in, not to worry we have entirely separate coolers, cooking areas, etc... safety first!
