Wifey brought home one of those huge packs of thick cut pork chops from Costco and I had a half gallon of apple cider in the fridge so I decided to try something new. Made a brine of the cider, salt, brown sugar, water and hot pepper flakes and gave them an over night bath:
On to the charcoal. Yep that's snow on the ground, but we're still grillin!! Tossed just a few hickory chips on to the coals to add just a touch of smoke.
Made up some homemade bourbon glaze:
About 20 mins later we have these tender hunks of sticky, bourbony, porky goodness:
Gave them a final coating of the bourbon glaze off the fire:
And added some bacon jalapeno mac and cheese on the side:
The Steelers lost, but this made Sunday worth while! Thanks for looking!
