chunks in foil?

when i use wood chunks do i wrap them in foil first or just put them right on the coals?
 
I've seen it done both ways. ANd you don't have to use chips, you can use chunks. Soak them first, though.
 
chunks in foil works best I hear with gas grills. just soak the chunks in water for 30 min before adding them to the coals. As a side note, those little grill smoke boxes arent worth the money IMHO, you get the same effect from soaking the wood and putting it on the coals. make sure to drain them well.
 
theres 2 sides to soaking wood. my side (& lots of others is) wet wood takes longer to smoke- bottom line. if ya add wood to heat - ya have smoke. but i'm a wood /coal burnoer.
 
I would only smoke chips.....not chunks.....

I use chunks, or split wood. Directly on the coals OR put around the sides.

The chunks are good for grilling too.
 
If you like opening the door every 20 mins. use chips, otherwise soak your chunks, sit back and enjoy the thin blue
