Last weekend these were such a hit that I'm doing them again, this time w/ more pics...

The meat. Gotta love Hy-Vee for the plastic tubs they put their meat in...just season and cover w/ wrap. No dirty dishes!


The spice arsenal. I usually keep it simple and light on beef, because it's dang good on it's own merit.


Ready for a night in the fridge...


I love the smell of a sear in the morning...


The baste. Again, simple, simple, simple. Coffee, beer, worchestershire, and browning sauce.


In to the MES they go....more pics later in the day.

two hours of smoke, flip, then two hours more smoke...


pour in the remaining baste...


in go the carrots (I love baby carrots with my smoke), and it's now foiled and slowly headed for 200 degrees. More pics tonight!
 
Lookin' like a good meal there. Keep the camera rollin'. Got a monster smoke goin' right now here, too. Good weather and great food! Gotta love it!!

Whoa...just got back from son's b-ball game, and probe temp was 210!! I backed the MES down to 190, and will keep the chuckies in there til 5:30 or so, then bring em out and wrap em in towels for an hour. Then more pics.
 
I know it's against the rules, but I had to take a peek...this was earlier.


All wrapped up and resting for a bit...still 201!!

Ok...I know this is just showboatin', but the first roast was definately fork tender.


First roast nicely sliced...


If you thought the first one was tender...notice I had to use a spatula to get the second one out of it's pan, and it STILL fell apart before I got it on the cutting board!!


No good way to slice this one, it just fell apart with every knife-stroke.


and finally, I pulled the remains after supper and froze em for another time.

I so want to do a smoke but the wind is up and the burn warning is out. Man I have a freezer full of meat and no smoke. BTW Nice chuckie!
