I dug the hole, filled it with mesquite and let it burn down to coals. I then seasoned and seared my roast on both sides. Next, the potatoes and onions were added, I did not have any carrots. I poured in a can of beer and then topped the roast with a can of Rotel Tomatoes.

I covered the Dutch oven lid with coals and lowered it into the hole on top of the bed of coals. Next, I covered the hole with a piece of tin and shoveled dirt on top of that, watching for any escaping smoke which required more dirt in order to eliminate.

After about 4 or 5 hours it was uncovered and promptly consumed.

Man that looks good Goat, I wish I could try that. But living in the city I don't have the chance. Heck if I owned the house I dig me a big hole on the lawn, but oh well. soooooo how did it taste?
 
Wonderful!!! PS: The potatoes were even better the next day.
 
What size Dutch did you use? How long in the hole? Thanks goat ..looks great.
 
That was a 14" deep oven. You cover the tin with dirt to seal in the heat, so as to act as a oven. Stand back and look to make sure that NO smoke is escaping. If it is, you have a small leak and you need to apply more dirt in the area of the rising smoke. I left the roast covered for 4 or 5 hours.
 
What a great idea, i bet that was some tasty food. Sometimes simplicity can be devasting... it's so simple it blows you away.
 
I don't rightly know. I never stopped eating long enough to make that judgment call.
 
Mr. Goat, your killing me here... Gotta try this. A question tho....you used mesquite..because you had it on hand? Could another wood be used?
 
Where ever did you get the idea to do it that way? Have you ever done it before? Sounds like something from an old western novel. I can just imagine you digging with an old shovel and wearing your cowboy hat.

Those pictures are great. The food looks yummy.

Don't think we could try that around our place. We live in a mobile home park for seniors. But there is a patch of ground out back by the trees.....naw....couldn't dig a hole that deep.

Bet that system would come in handy in the country where you come across roadkill, providing you have the other stuff handy in your trunk.
