chuck roast times for shredded sandwhiches?? best/ favorite smoked Beans recipe??

So I picked up two angus beef "chuck pot roasts" that I wanted to smoke and shred into sandwiches..

First: Tuesday I'm planning on smoking them( since in our area, Monday is suppose to be the best weather for a Range-Day) but this would be the first time I actually smoked any type of beef to, I guess you could say the "shredded stage" so I was wondering what temp should I take them too and how long you think they should take?? they are not big, only about 2.25 lbs each so I imagine they won't take long.

Second: I was trying to think of what to make with the beef and I got baked mac n cheese as an answer from one person which I'm fine with doing but I was also thinking of doing up some smoked baked beans as well as a side. So my other question is what's your favorite smoked bean recipe?

any/all suggestions and comments would be appreciated!
 
Smoke it like you would a brisket. Around 195* start probing for tenderness.

The chucks I've done, usually about 3.5lbs, take ~6hrs. That's usually 4hrs or so in the smoke to 160-170°F IT and then another 2-3hrs in a pan with beef stock and an onion to make some nice jus. If you don't pan, it will probably take longer.
 
I’ve only smoked some chuck roast once but it got me hooked. I would smoke to 195, wrapping at 165-170ish, then start probing at 195 until it’s perfect.

If you ever watch YouTube you can check out the bbq pit boys. I love their recipe for pork and beans, but you could easily alter it a little and add beef. Cooking with Ry also has some nice looking smoked baked beans recipes.

Don't worry i got my barbecue shoes on ;) lol thanks guys for all the help, i believe it's going to be a no brainer and i even got a cheap canopy for if it decides to rain
