Chuck roast/potatoes

Hello, been a while since I posted. Want to do Jeff's chuck roast with potatoes and carrots. Am wondering if I can smoke the roast a day or so ahead and then put in the oven with all the other good stuff and cook until fall apart as in recipe. Did not know if refrigerating for a day after smoking would have bad affect on beef tenderness. Can cook in oven at friends but they have no smoker. Can you believe that? LOL

I'd think it would be ok. Maybe not cook completely then into the oven with your veggies to finish cooking. But, I'm guessing. And actually that sounds like a good cook.

No problem. You are cooking it until it falls apart,so the amount of time Hot Smoking, 225+, is up to you...JJ

I smoked a chuckie the day before I used it. Came out fine.
 
Question, are you trying to smoke the day before due to timing? I've actually found a cheater method of smoke about 4 hours and drop it in the crock pot to work best for me. Gets it done quicker and you don't lose any of the smoke flavor, plus the chuckie tends to prefer cooking in it's juices which can get lost in a smoker. that might just be another solid option for you.
 
That settles it. Smoking it up on Friday, then packing everything up to the cabin for a Sunday dinner feast. Thanks for all the input.
