What do you generally estimate smoking time per pound, for chuck roast, to take up to 190* ish IT? 2 hours per pound?

I have a 2.5lbs chuck roast that I am going to make burnt ends with. I'll be running between 225*-250*.

I plan to wrap at an IT around 160* and pull of the smoker to cube up around and IT of 190*. Then back in, sauced, for another hour.

I smoked the 2.5lb chuck roast today and made burnt ends. It turned out great!

I had the chuck roast on the Traeger on the Smoke setting for about 3 hours. Then kicked the smoker up to 225* and went another 3.5 hours to an IT of 160*ish. I then panned it with some beef broth and covered in foil for 2 hours until the IT hit 190*. It was then cubed up and sauced with a little butter, and back on the smoker for a final hour. Total cook time was around 9 hours. Turned out great.

Those BEs look mighty fine to me.

Point for sure.
