Chuck Eye Steak Cook

Chuck eye is from the same muscle that makes up the rib eye . Between the chuck and the ribeye . I talked to the meat cutter yesterday . He said they are cut from the fifth rib , you only get 2 . Most guys don't mess with them , or they take them home .
Had another guy at a different store say the same thing .
Might be possible they were mis labeled .

Since you only get 2 from each Steer, I think Marty knocked out the whole North Dakota Herd, singlehandedly!!

Oh Hell yes that counts!! Looks absolutely fantastic. I'm heartbroken for you however that it didn't come out as well as you'd hoped. Prep and cooking look perfect so I guess I'll have to chime in with the rest of the sentiments here that it just wasn't a good quality cut of meat. It's certainly worth trying again though assuming you can find something that's a bit higher quality. If it were me doing it, I wouldn't change a thing about your process.

I took a minute to check the site where I get all my beef products from. They don't have the Chuck Eye Steak but they do have Boneless Chuck Short Ribs and they look virtually identical to what you cooked. I can't help but think the cuts would be very similar and I will attest to the outstanding quality and flavor of every piece of meat I've gotten from this place. Being that I'm planning to place an order today and take advantage of the 25% off Labor Day sale, I believe I'm gonna get some of the Short Ribs and give them a run. Your cook just looks too good not to give it a shot :emoji_laughing:

I have been wanting to try that piedmontese beef after reading all your posts so I added it as a favorite weeks ago. Now that it is on sale I am going to place a small order, thanks for the heads up. Is there a specific package you would recommend?

You mentioned the brown truck delivers it, how is it packaged and how long does it take?

Everything is shipped 2 day delivery. They only ship on Monday, Tuesday, and Wednesday so it's not sitting in the UPS warehouse over the weekend to spoil. It's all frozen and packed in special made coolers. If the cooler is not full of meat, hence adding to the total mass of frozen product, they fill it with dry ice to ensure it doesn't thaw out. Please note however, you'll get free shipping on orders over $100 so it's well worth it to get enough to qualify. Now....if you find it to be as good as we have and want to keep some on hand but there is no sale in progress, just let me know. Joe gave me an unadvertised promo code that will get you 25% off at any time, no special or sale needed. I'll share the code with you. He has given me permission to do so on an individual basis.

Sorry....I missed this in my first response. I don't typically get the packages, just individual boxes roasts and steaks. My first order was packages just to get a sampling of stuff but no more packages. Every single thing I have gotten has been just outstanding so I won't go through each individual cut and try to give a description. From a standpoint of value, the rib eye cap steaks are a great deal. Although small, the flavor and tenderness are beyond words. This is Tracy's favorite cut and I really can't argue with her. The Bavette steak is also a fantastic value. I've only done a couple of them but both have been exquisite. Going up in price a bit, the center cut rib eyes and NY strips are very hard to beat. With the sale in progress, or the use of the promo code i can share, I'd recommend the tri tip also. Zach and I did one of those a while ago on the rotisserie and it was stunning. If you really wanna drop some cash, go for the tomahawk rib eyes. OMG!!! Those were in the first order I placed. I did do a brisket flat but was not happy with the results. No fault of the meat, it was all operator error. Flavor and tenderness were there, it was just dry. I've thought through how I'll do the next one to avoid that as I do have another one in the freezer.
