Well, not having any family or friends that really smoke, when my wife bought me a smoker last Christmas and I have been determined to figure it out on my own. I failed miserably... I have burned many racks of ribs trying to figure it out. I stumbled on this forum and the 5 day course while searching for a getter way to keep temp in my 2 door brinkmann smoker. Thanks to the advise here I have ordered a better charcoals pan and some felt to seal the doors.

Once the new pan gets in next week I will be trying again to hold temps and make a nice rack of ribs.

I just found the fatty section.....wow, it all looks so good. I might have to try one next weekend and not the ribs I planned on. Maybe both....

One of the flaws of most run of the mill smoker designs is poor thermometer placement or construction.  Not sure if you've invested in a digital thermo yet, but I highly recommend it.

I have a digital probe for IT, but nothing for ambient yet. I usually set the thermometer from my oven in there but I keep having to open the door. I plan to weld a bung on and put a more permanent probe in the smoker, but my welder is currently out of gas.
