Christmas eve smoker Fun. I was freshly home from a train run into Kansas and the wife asked me to smoke some prime rib. We had bought a 12lb prime rib and cut it in half, froze one 1/2 smoked the other. She had it all rubbed down and ready to go so I fired up the smoker and cooked it at 225 for around 3 to 3 1/2 hours. My first time smoking in these temps. It was 14 degrees outside with snow on the ground.

Firebox freshly lit. Time to light up that Rocky Patel and enjoy myself...
