It's Christmas now! Looks fantastic Pops! Any pointers on cooling/resting? I tend to rush it. Last bird I cooled uncovered until cold and then wrapped but wonder if an overnight uncovered to degass/rest might be better.

I chill for at least 24 hours; in this case I finished cooking Saturday evening and 'put them to bed' in the back fridge and didn't bring them out to process until Tuesday at 12:30 pm, put the parts'n'pieces back in at 3:30 pm Tuesday, after cutting up the thigh meat. Then, today, (Wednesday), brought out the breasts to slice at 12:00 noon, finished them at 3:30 pm and back in the fridge. It is all about planning and keeping good Smoke Log records from year to year to refer back to. Where do you get a 'Smoke Log'? Right here!

Finished up processing the turkeys this afternoon (Wednesday), a two-day event. Yesterday, I brought out the birds and removed the wings (I keep them for myself to munch on), disjointed the legs and split them into drum and thigh, then took off each side of the breasts, whole pieces, and put them back into the back fridge to chill. I skinned, boned out and cut up (cubed) the thigh meat into a foil pan and wrapped (Glad Press'N'Seal®) and put them into the back fridge also.

Then today, I sliced up the breasts on my Nesco slicer (https://www.smokingmeatforums.com/threads/nesco-slicers.269976/):

and done! That is the largest roaster pan I can get, filled to the top. Took a break, made a sandwich out of the leftover pieces, then cleaned up! All ready for the party tomorrow!

This year, however, I was not allowed to take 'people pictures' a/c Hiipa regs. but they did take a group photo with release forms signed that, when i get my copy, I will scan it in and post it. Had a great time, all the chairs were occuped, standing room only, and many thanks for the turkeys and smoked cheese, too!
