I saw that in one of your posts. Where did you order the NM red Chile
Amazon. I suggested NMR only as to give you a direction to try mexican chile powders for this. Take a look at Eric's recipe, lots of good chilis in there to try. Many use blends like he is. I tried a few and ended up liking NMR so much that's my go to but I admit I am far from being done exploring and eyeing puya now. It is hot but about just right for me. Night and day difference using a good chile powder vs McCormick paprika/cayenne.

If you want the real authentic NM red experience I’ll give you a web site. It’s not as convenient as Amazon, but their products are 100% authentic. They are located in Chimayo NM. If you really want the flavor experience you need to order from a company like this one. They have all kinds of NM red Chile processed by them including the coveted Red Chimayo. They ship it in common zip loc type bags with sharpie writing but it is absolutely authentic. Enjoy.

Jeff, these are the simple people who live in NM , raise the Chile then process and sell. Like I said, it’s an authentic source for Chile, the real deal, no middle men.
Ill be buying some for sure. I'll probably buy a pound of the oven dried and half pound of the sun dried.
