Bosslady said she wanted pork chops, so I got some out of freezer. Looked like they had the start of freezer burn so i got some more (and grilled them) and decided to play with these. I let them thaw out in the fridge, and no evidence of freezer burn. I had never smoked pork chops before, so I gave it a whirl.

I seasoned them with garlic, lemon pepper, and blackening seasoning. Put them on the smoker initially on the smoke setting (PB4 Vertical) using mesquite. Smoked for an hour on the smoke setting (smoker temp ran 150 to 160), then kicked temp up to 200 (or 225 for another hour). I wanted to try for a sear, so turned temp up to 400 for about 10 minutes. I stood out there just to make sure I didnt burn them up. I didnt get the char that I wanted, but good anyways. In future, I'll try a really hot cast iron skillet on standby for a reverse sear.

I gotta say, I am a fan of smoked pork chops. Ate one and rest went to work with me and they were tasty. Simple chops but good. I normally grill.

Thanks for reading...

They look great to me! I thought I was the only one that at times used lemon pepper on pork! A quick sear would have been the perfect finish for them like you suggested.

Some tasty looking chops bud. I like to sear them hot at the end as well. That little bit of char adds so much flavor
I'm going to add a char to my chops in the future. One of the things I really like about doing chops on the grill is the char.
