Chips in the smoker

Hi from  Dustyroads ; Have an older 30 inch black Masterbuilt smoker. Didn't have a top vent, Installed 2inch hole, put in a 2 inch nipple with jam nuts top and inside, Put a 2 inch coupling, made a damper, everything works fine. Always had a problem with wood chips.

Too many chips and the temperature spikes taking too long too cool down. Some say leave the top vent wide open, Question is how to adjust the air flow. I am trying to make jerky. Thanks, glad I found this site. 
 
Is your smoker gas or electric ??    Use fewer chips and add the lesser amount every 20-30 minutes...
