Chipotle Pulled Pork

Found a half pork shoulder at the store for $6 so I figured why not try something new.

Tossed the pork in the crockpot on low and made a Chipotle Sauce for the pork to simmer in. Pulled the pork from the crockpot and shredded it and put it back in the sauce to absorb more of the flavors.

Gonna make for some great sandwiches and tacos!

Chipotle Marinade

7oz. Can chipotles in adobo sauce

1 teaspoon cumin

1 teaspoon coarsely ground black pepper

1 teaspoon Kosher salt

1 teaspoon dried oregano

1/4 cup chopped red onion

3 teaspoons minced garlic

Juice of 2 limes (about 1/4 cup)

Put all the ingredients above in a food processor or blender and make into a smooth paste.

Chicken breasts and thighs can be marinated in this up to overnight and then grilled too!
 
I smoked one kind of like this and loved it! Thanks for the marinade recipe, gonna try it on chicken or pork tenderloin.
