I’ve seen these made and wanted to try some myself. First time, definitely not the last time I make them. Gotta tweak the recipe some, I kept it nice and simple. Halved jalapeños, cream cheese inside. Wrapped the thighs around them and then bacon. Used some Zippys BBQ seasoning inside and out, along with some Everglades as well. Had some peppers left so I threw them in the smoker to make some chipotle bbq sauce tomorrow with the drippings off of the brisket I threw in just before midnight. (Pics tomorrow) There were just a few pieces of bacon left, so I made bonus snacks. Smoked it all at 275 for just under 2 hours. Used apple and hickory on the MES.

I like the twist on that, they look really good. I'd like to try this but curious on the bite, fork and knife deal? And did the thickness of the chicken over take the pepper and cheese? i.e. would it be best to pound out the chicken flat? All in all though I think it's a fantastic alternative to our beloved fatty meats that are usual on these treats.

They needed something else. Next time I think I’ll cook the pepper just a bit first. I think the texture would be better. Might add some cheddar and chorizo to the poppers.

Very interesting idea. I like the looks. But I think you're correct on the adjustments that should be made. When I stuff chicken I use a 50/50 blend of cheddar and cream cheese. And add more then you think you need with spices, except salt or salt based spices. I keep that light due to bacon being used. I don't precook the jalapenos. But I think that precooking them slightly will change the texture. I like the crunch that remains with them not being precooked. I've also minced the jalapenos or pablanos and added that to the cheese mixture instead. They were quite good like this as well.

These look awesome! I’ve had bacon wrapped poppers but never heard of using a whole chicken thigh. I’ll have to test these out sometime.
