Chicken Sausage Recipe

I have several chickens that are approaching the sad day. Thought this time I would just cut them up and make sausage. I have a turkey apple sausage we use on wild turks and love it. I could just sub in the chicken I suppose but was wondering if you all had a to die for chicken sausage recipe you might suggest. Thank You!

This is one I make from tropics . I make this all the time . It's fantastic , family loves it , and it don't last long .
I follow it as posted , but add more fennel and a bit of anise . Formula is later in the thread , I think around post 14 or so . Give it a try .
