Chicken Salad
A delicious basic salad with a delicate taste.

Ingredients

• 2 cups cooked cut up chicken, or turkey
• 1 cup thinly sliced celery
• 1 cup small green grapes
• 1/2 cup slivered almonds, toasted
• 1-1 1/4 cups mayonnaise
• 1 tablespoon lemon juice
• 1/2 teaspoon salt
• 1/8 teaspoon white pepper
• - lettuce cups
• - whole toasted almonds
• - watercress or parsley

Directions
Combine chicken, celery, grapes and slivered almonds. Combine mayonnaise, lemon juice, salt and pepper. Fold into chicken mixture. Refrigerate, covered.
To Serve: Spoon into lettuce cups. Garnish with whole almonds, watercress or parsley.
Amount: 4 servings

Chicken Macaroni Salad:
Make as above except omit grapes and almonds. Add 1 cup cooked macaroni (rosamarina, rings or small shells) and 1/2 cup cut up hard-cooked eggs. Garnish with one or more of the following: hard-cooked egg wedges, small, ripe pitted or small, green stuffed olives, radish roses, or parlsey sprigs.

It's a classic and call me foo foo but real good served in half of a seeded cantelope.

this is a great low fat recipe.

1lb pulled chicken
2 ripe avocados
1/2 diced onion
1 c. roasted corn kernals
1/2 c diced red pepper
salt pepper
lime juice 1 lime
minced chipotle in adobo to taste
cilantro to taste

mash the avocados with the lime juice and mix with the rest of the ingredients. the avocados are the mayo part of the recipe, if you need it creamyer, I would use sourcream.



great as a cold wrap on a tortilla with a little cheese and tomato

Some chopped up leftover smoked chicken er turkey, enough mayo ta make it smooth, then a few shots a black pepper an a dash a salt. Serve on sourdough bread. Simple an very tastey!

that is a great recipe except for the chicken, mayo, and celery..lol. just kiddin man. that looks great..
I love chicken salad..and will make that one..although water crest is hard to find around here.love that stuff..

It's fantastic salad BTW.
Comes from "Byerly's" a famous grocery store and restaurant here.
