This is my second attempt at chicken in the smoker. I did two racks of 5 bone and skin on chicken breasts. They didn't turn out as I had hoped, but the snow and wind weren't helping. I smoked a whole chicken about 3 weeks ago, which turned out awesome. I was hoping to recreate that magic with just the breast but it just wasn't as good. I think it would have been better if I could have smoked them faster but it was difficult with the weather conditions and the youngling's nap schedule. I can't wait for spring!
