Made 5 lbs. Of andouille today and now they are resting in the fridge and getting happy. Will smoke with hickory on Saturday and hopefully make gumbo on Sunday.

I've always wanted to make gumbo, but never really knew just how to do it. Now I do. So now I'll be making some gumbo--with file, definitely not okra. :p
