Started out trying to make some low carb tortilla's. Was not a fan of the texture and ended up eating them with a fork off the tortilla. I have a couple brands I like. Albertson just marked some of some packaged seasoned thighs so went with that. The were really good. Very juicy and great flavor. I used duck fat for everything.

The Fajitas look good. I had picked up a gallon bucket of Duck Fat to cook with, when I ordered some Whole Ducks. I thought it was Great to cook with. My family HATED the flavor. I tried to use it just for me but after a year it started to get funky. Tossed most of it out...JJ😣
 
Looks good Brian and the plating is next level. I've never used duck fat so now I will stole down that rabbit hole with some research ....... The things I learn here :emoji_sunglasses:
