Cook chicken at desired temp. Shred, chop half white onion add olives if you like. Mix some green enchilada sauce with chicken and onions. Put sauce in bottom of a oven safe dish. Lay flour tortillas (better if cut in half ) down then add cheese of your choice. I left tortillas whole this time. I used Mexican 3 cheese blend. Added chicken mix. More cheese,
More sauce. Another layer of tortillas, more cheese and sauce and mix. Another layer of tortillas topped with cheese. I didn’t have olives so none were added. Bake for 30 min at 350 degrees covered with foil then another 10-15 uncovered
