Help! This is only my 2nd time to smoke. I seasoned chicken breasts & wrapped them in bacon. They are ready before I thought they would be. How do I keep them until supper? Wrap in foil & put them ???
 
you can wrap them. Did you probe them to be sure they were done? At what temp were you smoking at and what kind of smoker?
 
I have a Char Broil vertical electric. I completely new at this. I tried to maintain a temp of 225 - 240. Temperature fluctuates. The IT got to 168 - 172. Will chicken be safe if left wrapped for 1 1/2 - 2 hours?
 
Id throw them in the fridge then back on the grill. I know you wrapped them on bacon so you can even throw them in the oven to help crisp up the bacon. Don't worry they will be fine and next time even better.
 
May I offer a suggestion    ?

Start a log of your cooks , record all the info. you might want . Looing back at how you did a good or not so good method. Keep your recipes , ideas and needs there .

Next , I suggest a lot of practice , get good (or should I say - till the Family gets tired of what you are cooking) at one thing , then go to the next challenge.

Start with , say , Chicken ,then Fatties , and Pork Butt . . . the more forgiving things .

In no time you'll be the Back Yard Chef of the Neighborhood .
