had a fat spike at 325 but caught it early and got the UDS back down to 300F
3 hour and 45 min
Wrapped and rested in cooler until internal temp was 145F
NO complaints from my pickey eater!
This was a really amazing cook! Never did beef ribs before and they will now be a regular in this house!
