Chicken Apple Sausage - Help!

Several months ago I stumbled onto a website that had rec'ps for just about ANY sausage you wished to make. I was going to make chicken apple sausage, got the collegen (sp) and now I cannot locate the site.

Anyone have a potential clue as to what I had found prior. My bookmarks got reset and I am struggling finding this with Google.
