Chicken and garlic sauce + santa maria

In this cook chicken is washed in garlic sauce few time.

Mujdei garlic sauce.

Original recipe
 
Press a large amount of garlic into a mixing bowl. I used 2 medium bulbs and I wish I had 2 more.
Add a pinch of salt and olive oil, then whisk continuously until a smooth, emulsified paste forms. Stir in finely chopped fresh parsley (or cilantro) and gradually pour in warm chicken broth while whisking.

You can use this sauce as an addition to any grilled meat or fish or as a busting sauce while grilling.

I just picked up that same Santa Maria grill...local Walmart had 1 left on clearance for $290....couldn't pass that one up!
 
Oh now I am jealous! :emoji_laughing:Very nice grill, and for that price is a steal.

On a side note, I am using lump charcoal and Oklahoma Joe's Xl chimney. I place few large unlit chunks along the edges and pour lit coals over. It was just enough to get these chicks to the right temperature without burning them.
I've read that lining this grill with firebricks helps to reduce fuel amount without temperature loss, but at the same time makes it tank heavy.

I don't use burning side of it yet, since we got fire ban here and with wind this thing is a living firework.
