When we make our own Provel, we use a couple of drops of Liquid Smoke. Really kicks it up some. Actually cold smoking such a low quantity doesn't make sense, but I've not made Provel for a very long time (years), so now when I make it again, I'll use my smoked cheddar...maybe the other 2 cheeses as well, if I smoke them as well.

Ahh...the eternal "argument" over deep dish PIZZA. :D Whatever anyone chooses to call it, it's GREAT! I wouldn't be surprised if Chicago natives have been shot over this difference of opinion. People get shot regularly every weekend over some thing or another.

In fact, Chicagoan's were assured that the loud popping noises heard there on July 4 were only gun shots. :D
