  • 1 medium zucchini
  • 2 eggs
  • 3/4 cup panko bread crumbs
  • 1/2 cup regular bread crumbs
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3/4 tsp garlic powder
  • 1 cup shredded cheddar cheese
Put the shredded zucchini into a kitchen towel and get all the water out! (no lime was used)

Well these were good! they all got eaten!
more salt and some heat next time
 
yes oven bakes 25 min at 400F and if you make them smaller go less time.

My small garden is making food faster than we can eat... Zucchini, eggplant, cukes, basil, tomatoes

Looks great, my better half has grown loads of courgettes (that's what we call zucchini in the UK )
So i'm always looking for different ways of cooking them.

BTW don't be afraid to alter this recipe. This is a good binding base, but I could see bacon crumbled in or smoking the tots... Did someone say blue cheese?

Braz ... lots of rain here so the plants are making 2 zicchinis every 2 days, but the vine borers have entered the main stem so the plants will die soon.

cukes are the next wave!
