After getting the newsletter this week I thought some meatballs would be a good low-key finger food for a pool party later today. Here are a few pre-smoked pics. I followed the recipe but didn't add jalapeño since I'm not sure of the other guest's preference.

First rack rubbed and going in the fridge


After a rest in the fridge until the smoker was heated up. I added another shot of rub before they went in.


See ya in about 2 hours for the money shots...
 
Verdict: very good recipe! I think these will be a hit. I ate 3 of the already, for quality assurance purposes of course....



Debating whether to sauce or not... Might have to try a few more to make an informed decision.
 
Those look tasty! I suggest a small crockpot with sauce on the side,it's nice to have a warm option on the hot food and they can decide for themselves.Thumbs Up

I'll take the sauce options under consideration for next time.  50 of these meatballs didn't last for more than 10 minutes.  I don't think these people eat at home???
