Cheese placement

Just wondering about placement of the cheese in my MES. I have the AMNPS on the bottom of the smoker and the cheese on the top rack.. Is this ok? Should I have the cheese on the midddle rack? Any suggestions?

Oh yeah, vac-pack and wait at least 2 weeks to eat it..... save some for 6 months down the road too....

  top rack or the next rack down and you're good! Dave is right, be sure to let that cheese sit a while after smoking. I don't touch it for 30 days myself, and if you can save some for that 3/6/9 month mark you will be rewarded. Good luck, don't forget the q-view!
