Have to agree WC, just pulled two pounds of cheddar curds from the big cold smoker that my wife has something planned for.

Great looking Cheese. Try some Mexican Cojita, does real well and is soft, so a little less Smoke...

Having flashbacks.....

Those were my choice the last time I smoked cheese...... used apple for the smoke.

They're looking good!
