Had a break in rain and a day off, direct opposition to an Off Day. Took advantage of it and sliced a bit of tillamook cheese and an odd ball mozzarella for the wife.

Used an Amps tray for the first time with apple pellets as well as a tube full. Smoked for 6 hours. Set in fridge for a day then vac sealed. Little Jake is a trooper when it comes to cold smoking. Good draft and holds a decent amount. Thanks for looking. I need to make another 25-50 pounds before the weather warms.

Looks great. Where did you get those racks?
I got them from old hickory and some from Amazon. Amazon had them cheaper. They have a couple different sizes. The bigger ones fit big Jake better. They are winco doughnut baskets
 
Cheese looks good FB, another 25 to 50 pounds. That's allot of cheese.

I missed 2 days of 32-34 degree sat and Sunday. I may get another shot but I’m not sure
