Kind of a last second post. Thought I would share as would be good for this holiday weekend. These have become the river rats favorite peppers as well as mine. Not able to grill at the river with the burn bans so making some for me at home. We need rain desperately. I been using these big peppers either from Aldi or Walmart. Try to leave the veins in and a few seeds to keep some heat. Just kind of lift out that big white center with a spoon. I just take a big block of cheddar and cut a big log. Does not need to fit in the pepper as it will melt into it. The cheese says in the pepper for the most part. I use Jeff's sweet heat rub on them. Wish I would of took pic of process but will next time. I just ate 6 of these they so good.

Those look incredible! Next time, try smoking a block of cheddar. That would awesome in these treats!
