Hello, all. Just checking in as all good newbies should. Got referred here by my brother, Seboke, and I must say, he hit it right on the head when he told me what a great, helpful site this is.

My name is Jim. Live in the Phoenix, AZ area. I am currently a police dispatcher, after working as a police officer, firefighter, and a few years in the Army as an MP. Going to school to get my degree to teach either junior high or high school math. Should be done with that before to much longer.

Unfortunately (please, don't beat me), I have not smoked anything edible in my life. After talking to Ken (Seboke) and looking around a little bit here, I just might consider it. I do like cooking on the grill, but standing in front of a blazing hot grill at 4pm in July in the deserts of Arizona is not something that is at all pleasant. Should I start, I am sure to be around for any tips.

That's about it. Great site with lots of helpful info. I hope that I will be able to return the favors someday.

Jim, Another noob here who now smokes edible meat thru the help of the SMF. You will do fine with the help of these fine folks. Good luck with the math teacher pursuit. (my mom is a retired one)

Glad to see you finally came on board! Give yourself one try at smoking and you'll be hooked for life. You old gas grill will become jealous of the smoker!!

Welcome aboard! Take the 5 day E-course, it's free and gives you alot of information to work with. Read some of the posts in the different areas and you will see all the different things you can do in a smoker, it really is an enjoyable and delicious way to prepare food! It does not have to be an expensive hobby, but be forwarned it becomes addictive! Again, welcome!
