I have just recently found this forum while making plans to build a smokehouse. I live in Borden County, TX which is on the south end of the Staked Plains...along the Caprock Escarpment. I live on and manage a ranch here....we are in the commercial cow/calf business. Hobbies aside from my occupation are landscape photography, field herping, keeping and breeding reptiles and amphibians, hunting, cooking, and enjoying good music. I have been interested in smoking and curing for a long time but have lacked the equipment to get seriously started. I'm starting the process of renovating an existing building into a smokehouse for which I made this post:
