Hello everyone! I think I have read this forum for a few years, not sure why I never registered. I am a Chef at a small, farm-to-table restaurant in Bangor, ME. I started smoking food about 3 or 4 years ago using my cheap can cooker. Can't even remember the name, but its a $50 WSM knockoff. There were tons of posts about mods and I was able to get it to work well enough. Last year it suffered a tragic bulldozer death and I just picked up a Pit Boss Austin XL. I found one at the local walmart with the box almost falling off of it. After making a couple jokes about how no one wants that one I offered to take it off their hands if they gave me a discount. So, I got it for a little over $400. I look forward to learning from the experience on this forum, and hopefully I can get what I need out of this pellet smoker. So far, I have just grilled some burgers but will be cooking a 5 course menu later this month that will feature BBQ styles from all over the world.

Welcome from MI, you will be filled with ideas to use that smoker for if you spend much time on here, look forward to some of the responses from the restaurant crowd about the “blue collar” recipes you are feeding them lol
