Well, hello all. My name is Big E, and I've been smoking for only about 6 months now. I live in Polk Co, and smoking is fairly popular here in the South. A buddy of mine is responsible for me getting started; He bought me a vertical smoker at a community garage sale - in which I paid him back in beer, LOL!
Anyway, I've got an inexpensive one - A Brinkmann Gourmet Smoker Grill (Red), but it'll have to do for now. I've been unemployed for some time, and until the money rolls in, it's my smoker of choice.
I have cooked about 6-8 times, and have done fairly well the last 4 or 5, BUT, all I've smoked is either chicken thighs, or pork picnic/butts.
I've been using 2 rubs. One thing I've learned that my smoker isn't the most efficient, so I go through a lot of charcoal. If i'm going to use that much charcoal and wood chunks, I may as well smoke more meat at one time. So, I'll use my buddy's rub on 1 butt, and my own creation on another. (I tend to like mine more - his is more peppery, and mine is more sweet.
Today, I'm doing two 11 lb butts, 1 rack of baby backs, and 6 chicken thighs. I forgot to take pre-cooked pics, but I might add some finished pics when I pull these bad boys off here in 15 minutes.
I look forward to discussions with you, and I'll be taking some advice that any of you feel like giving.
By the way, I start my new job on Monday (with most weekends off,) but I'll still find time to get my smoke on!
