The local Brookshires throws these racks out every so often after they scavenge & carve all the prime off of them and it appears myself and a few others scarf them up. less than $3/lbs they're in the money. So I get them, in this case give them a nice bath in cold water. Remove the layer of membrane off the back side/bone side. Apply a thin layer of Olive Oil and then the liberal application of rub, Meat Church Holy Cow for this round. Results are consistent. This time they were cooked with CookinPellets Perfect Mix with the Y640 set @ 350 deg. Placed them on the top self and after about 2 hours the IT was anywhere from 180 to 210 - They were done. Nothing short of AWESOME! Here's a few picks. So easy and so freaking good. Wife made the awesome pan of sides w/ mushrooms, Cauliflower, Greenbeans & Onions w/light addition of Olive Oil. Don't get no better than this :)
