Anyone doing any special foods for the games today?

Going to make some pizzas in the Roccbox - a few margheritas and a dessert pie - this afternoon and maybe doing surf and turf tonight.

Nothing special. We are out of town for Ann's Birthday get away. The hotel has a good restaurant. So, we'll have something from there.

I will be working but I believe my wife is making corn beef casserole with some left overs from the other night.

You can, it's a piece of cake!

  • 450 g (16 oz) strong white flour
  • 200 ml (7 fl oz) lukewarm water
  • 50 g (2 oz) sugar
  • 25 g (1 oz) butter, melted
  • 2 eggs
  • 2 tsp dried yeast
  • 1 tsp salt
  • Sesame seeds

Instructions
  1. Put the sugar and yeast into the water, mix well and leave for 10 minutes for the yeast to activate.
  2. Break one egg into a bowl. Separate the second egg into yolk and white. Add the yolk to the first egg and add 4 tbsp of water to the egg white. Beat both items separately.
  3. Sift the flour into a bowl, add the salt and mix. Make a well in the centre and add the yeast/water, the melted butter and the (egg+egg yolk). Mix to a soft and slightly sticky dough.
  4. Turn the dough out onto a well floured surface. Knead well for 10 minutes, sprinkling the surface with flour from time to time if the dough starts to stick. Use a KA mixer with dough hook
  5. Make the dough into a ball and place in a lightly greased bowl. Cover and place in a warm place until the dough has doubled in size.
  6. Turn the dough out onto a lightly floured suface. Knock the dough back and cut into 8 pieces. Six pieces
  7. Flour your hands and shape each piece into a ball. Press the balls of dough out to about 3" (15 cm) in diameter and place on a lightly-greased baking sheet. Cover and leave in a warm place for about an hour or until the dough has puffed up.
  8. Brush the tops of the buns lightly with the egg white/water mixture, sprinkle on some sesame seeds.
  9. Bake at 175°C/345°F fan oven, 190°C/375°F normal oven for 12-15 minutes until brown. Place on a wire rack to cool.

Smoking a pastrami from a store bought corned beef, and of course indulging in some adult beverages. Don't really have an opinion on any of the teams left so I will just be watching my pool box scores.

Made a Pop Pop pizza last night for today's games. Used WAAAY too much cheese, pepperoni, and sausage so I gave our smoke alarms a workout as the grease dripped out of the pan. Nice little oven fire, too. No problems though. Immediately ordered a deep-dish half-sheet pan to eliminate the overflow next time. Cleaning the oven today.

Plenty of pizza left for the games. And a clean oven!
