1 Rack of Smithfield All Natural Extra Meaty Baby Back Ribs.
Memphis Dust Modified Dry Rub [no thyme, rosemary or brown sugar].
I removed the membrane yesterday, rinsed the ribs off and gave the cat the membrane to snack on.
I sprinkled the ribs with kosher salt and sealed the trash with Press N Seal and off to the fridge they went to marinate for 23 hours.
11 days post elbow surgery, but I mustered just enough energy to reset the smoker yesterday afternoon.
I got up [begrudgingly] at 08:20 MST this morning and went out in the bitter cold to light the chimney of coals, remove the mid-section from the smoker and then back inside to the warmth of the house to sprinkle the rub [Memphis Dust modified] on the ribs. At 08:47 AM the basket of coals was burned enough to dump in the bottom of the smoker and away we go!

Kickoff is at 13:00 MST. My Broncos are taking on the visiting New England Patriots in the AFC Championship Game to earn a chance to go to the Super Bowl! Go Broncos!


The ribs should be done right around kickoff time (4 hrs and 15 mins has consistently been smoke time with ribs on this smoker).
My friend Michael is coming out and bringing some fried mushrooms with him for one of our sides. I have some Smokehouse BBQ baked beans (from Independence, Missouri) in the freezer to go with the mushrooms and ribs.
