I've been making snack sticks for about a year now and usually get my casings from a place called Waltons. Only thing is you have to pay for shipping and sometimes the shipping is as much as the product. I've never had a issue with these casings. Recently I've ordered from a couple reputable company's and after smoking I had the same outcome on all...SUPER TOUGH...I haven't changed any methods. Am I doing something wrong or are these just bad casings. Collagen mahogany by the way. Any info or maybe places you guys purchase from is greatly appreciated....Dave
 
I email Walton’s reminding and letting them know everytime their competitors offer free shipping. I love their products but like you said, the shipping charges are ridiculous. Maybe if enough of us emailed them, they would offer free shipping more often like ps seasoning, LEM, and the sausage maker.

You would need to know what you bought from Waltons and what you bought from others to compare .

I personally don't use collagen , but know they make different types for the sausage being made .
has to do with strength , wall thickness and fresh or smoked sausage .
 
Same issue For me. I’ve made a few batches with store bought LEM collagen casings and can’t get a good bind and texture. Taste is excellent, but need help with the casing issue. Is it technique or casing? I plan to buy new casings from LS or somewhere to see if there is a quality difference. Also as you can see in the picture, I don’t get that wrinkled look like others. Thoughts?

FYI.... casings from SausageMaker ship free on Amazon Prime, but you have to pay for shipping if you by direct from SausageMaker.

Good idea cause I usually won't order just the casings...I usually make a 50 to 75 order so it's worth it
 
FYI.... casings from SausageMaker ship free on Amazon Prime, but you have to pay for shipping if you by direct from SausageMaker.
I believe the last ones that I got were from Sausage Maker and they weren't any better. The LEM ones were the other ones that were also tough...for me anyways
 
Yes and you can also see in the picture that those casings are tough. Waltons were the only ones that did it for me but just sucks paying just as much shipping as the casings...there is a local store that makes keilbasa and sticks but they will only sell me the keilbasa casings...maybe I'll try the clear collagen casings and see if I have any luck with them

Lol...they could be..that's what I usually do is end up spending 50... I'll buy some seasonings and stuff also...i only make 10lbs at a time though so they last me a while when you have so many... sometimes I just need the casings... never had an issue with any of their products
 
Try OwensBBQ.com.... They also have some great seasonings... I've found that Owens has a better bang for your buck on the 19mm Mohogany casings...



Don't stuff so tight and ice water bath when done...

Don't try the clear collagen, those are the absolute toughest and worst!
Most delicate are the FRESH collagen. They do a good job replicating sheep. Clear collagen are only good for stripping off to make skinless IMO.

Yeah I won't be trying them. I just made a small batch with sheep casings and they came out alright...a little harder to use than the collagen ones but tolerable
 
smoking them is your problem. smoke them till you get a nice color around 130 IT then water bath/poach in 160 F water to finish...it will cook them and keep the casings soft.....or water bath/paoch first and then cold smoke to get your smoke flavor....other wise use fresh sheep casings.

Side note i buy a lot from waltons.... great products but beware, they hide bad reviews ive posted 2 1 star reviews on their patty maker and checked if they made it on the website and they never posted them....very shady if a company pulls shit like that, it was an honest review on a faulty product and they prevented it from being posted
