that is exactly how I do my cappocollas only difference is I dont smoke them.. .it is hard to find natural hog middles.. instead I use nylon stockings and 1/8" coat of pork lard over stockings..
most of the time I do get funny look from cashier when I'm buying naylon stockings but man's gotta do what he's gotta do.. Worst look I get when I ask for largest naylons size.... its a bitch to find nylons size large enough for pork ham....
