Can't do bend test with ribs

Why you ask? My first try at baby backs and all I could find was two 10 inch long racks...Damn.The learning curve, I understand, is to hold the ribs and watch the 90° bend. LOL.IMPOSSIBLE Anyway--I held by the last two ribs and not much bend but did see bark cracking and IT was 195.5 on one and 204° on the other/. Tonight-The taste test will tell. I did one with foil after 2 hours (the 195.5° one) and ran the other one (204° one) all the way through..Time will tell (I said that before didn't I) Thanks all my teachers such as TNJake and forktender(Dan-GET WELL ! ) Love you guys! happy.gif OK---follow up. Smoke ring, good crust and SUPER delicious& J U I C Y --What more can I add? Thanks again you guys and gals.. WOW---Happy Dance. I really believe the simple--throw the ribs on- 265-270°-spritz every hour- will be my "new" method. SIMPLE --I repeat SIMPLE
 
Dude where are the pics?! Lol I’ve never had much luck doing the bend test but seems like if I can hit about 200-205 then rest them for like 20 minutes or so they are like candy to me!
