cant control temp on char broil smoker

Ive got a char broil vertical gas smoker. Today is my first time useing it and i cant seem to be able to control the temp very well it runs very hot. Can anyone help me out with mods that they have done to similar smokers. I saw one thing where a guy used a separate water pan and used the water/chip pan it comes solely for chips. I was using the tray for chips only but it was running way to hot was i just not using enough water or what? i never had a problem with my other smoker

I have a Masterbuilt gasser, and it wasn't until I added a needle valve that I was able to get the temps down. I needed a couple of adapters to match the valve to the existing line. Got the parts from a local Ace Hardware.
