Hi guys, my name is Craig and I live in Montreal. I currently have a brinkmann gourmet charcoal smoker, and it's treated me very well, but I will be ordering the Smokin-it #1 in the next few weeks. My favorite recipes are KC dry rub on baby backs, lemon pepper smoked chicken and pork butts.

I've only been smoking for about 2 years, but have a great interest in it and hope to learn/share a few things in these forums. Some things I have yet to smoke but plan on doing soon, is Mac n cheese, almonds and jalapeño poppers.

Oh, I also love beer!

Cheers,

Craig

So... I made some new purchases to enhance my smoking experience this week. First i got the Smokin-it #1 smoker. It is surprisingly small in size, but surprisingly fits a lot of food, more than enough to feed me and my wife and son. I then got myself a Maverick ET73 digital remote thermometer. Another plus of this setup will be that the smokin-it doesn't get hot on the outside, so it gives me a little peace of mind with my 3 year old running around the yard, whereas with my brinkmann charcoal (which i will still use occasionally) I am always scared he will touch it.

I also got some amazon giftcards for christmas, and decided to pick myself up a jalapeno tray, a sauce mop, a bunch of different wood chips, a jerky gun and lots of seasonings. I plan to put this all to good use, and will usually try to take pics and share them, along with the recipes in the forums!

I am one excited Q'er... the smokin-it has just had it's 2nd seasoning and i'll be trying some beef ribs and a few ABT's to start!

Cheers, and happy smoking!
