Hey guys, name's Adam. I'm a sheet metal worker in Victoria, British Columbia, Canada.

Been smoking things for about 6 months, I've got a big chief I inherited from my late father in law that I've been using. I've also got plans going to build a larger smoker at work.

So far done a lot of jerky and cheese, with a few rib attempts, and some random sasuages and things like that.

I admit I've used this site since I started, just finally decided I should sign up and say hey. So.. Hey!

Thanks guys! Sorry I haven't been around much, my wife is do with our first kid in four days... june 11th due date so things are pretty crazy right now heh.

That being said I did find time to smoke my second batch of ribs last weekend. Three hours in the smoker with apple wood chips, then two hours foiled on the bbq at about 200*, then one hour out of the foil at about 200*. My smoker doesn't quite get up that high so it's hard to finish them off in the Big Chief. They were fucking delicious though, some of the best ribs I've tasted! The wife loved them too!

I've got some beef marinading for jerky, and a few blocks of cheese I'm going to do tomorrow.
