Hi all, I'm a Canadian from Ontario, and recently moved to the US for love!  I just got my greencard and am looking forward to my first 4th of July!

I have a Brinkmann smoker griller, and am in love with cast iron pans and dutch ovens.  (sadly, my DO just had a big enamel chip in the bottom, so I am in the process of seasoning it, and hopefully replacing it soon)

I have some meat in my freezer, but have never smoked before, just grilled, and only recently barbecued.  (yes, I do understand the difference)

I'm hoping to learn a lot from you here, and came here to try to find out what to do for my first smoking attempt.

I have hickory chunks available, as well as JD's flavour chips, so can use either for smoke....

meats available are :
  • 2 chickens
  • brats  (beerwurst and regular)
  • 8oz steaks (petite sirloin)
  • beef chuck roast
  • beef rump roast
  • pork loin roast
  • and 8oz pork loin chops.
As you can tell I don't know which lend themselves to smoking and which don't, (esp. the beef)

So, can someone please give me some ideas on what to do for my first ever time smoking??? I want to pull it out of the freezer to thaw right away!

Everything on your list can be smoked and in my opinion Should be smoked! For your first smoke I would keep it simple with something that doesn't take to long. The brats and/or chicken would be your best bet.  Brats, super easy! Chicken, a little more involved but still easy.

Howdy! And welcome to the US! I've always been warmly welcomed in Canada, even in the middle of February; so I hope you are treated at least as well and a whole lot better here.

As for smoking, I agree that the brats and chicken are probably best to start with. My bride has made me paranoid about dealing with raw chicken and the possibilities of salmonella, so I don't cook (smoke, grill, barbecue) it as much as I do ribs, butts, and brisket. If you are confident of your poultry prep skills, smoke the chickens.
