Hi, I am a chef from Kelowna, British Columbia.  I have been cooking all types of food for 25 years but have only recently got into barbecue.  Canada has almost no BBQ restaurants and my partners and I are planning the only open pit BBQ restaurant in Canada (as far as we can tell anyway).  If there are others we have not been able to find them.  Any ways people love smoked foods here just like anywhere, so we expect our little place to be pretty popular.

Currently I am practicing away on a 6'*2' homemade tow behind grill I bought that I use for catering.  It works pretty well, but eventually we will build a very large brick bbq pit with smokehouse for the restaurant.

I hope to find lots of info and tips in the forums and meet some cool people along the way.  Thanks, Tim
 
Welcome aboard. I recommend a fact finding trip to Texas for a BBQ crawl: Kreuz, Black's, Franklin's, Stubb's, Smitty's, City Market, etc, etc.  Within a few mile radius of Austin Tx will give you the ideas of how a BBQ joint looks, feels, and is run.  The pits are HUGE brick jobs with large metal lids that require block and tackle and counter weight mechanisms to lift.  The meat is sold by the pound and served with pickles, onions, white bread, a list of sides, and a roll of paper towels.  Good luck.
