Can you over cure chickens?

Last week I started curing a couple of chickens using pops recipe. I had intended to smoke them this past weekend but due to commitments I was unable to.

Its been six days, will they still be good if I smoke them this evening?
 
You can't overcure with regards to length of cure. The longer it stays the saltier it will be. Just desalinate it in ice waters for an hour or two first
 
Well here it is, my first attempt at curing and smoking chicken.

Fresh out of the cure, rinsed and patted dry.


Warmed up the smoker to 250, used cherry wood.


Out of the smoker, and let them rest for half hour.


Ready to Carve and eat.

 
They look GREAT! I can see the pink cured chicken on the inside of the legs. I do have a question???

In the first pic why is your chicken mooning me???
